The Certificate III in Commercial Cookery provides you with the essential skills and
knowledge required to join the kitchen as a qualified chef.
Build your skill set and explore cookery techniques in basic methods of cookery and learn
how to prepare poultry, seafood and meat dishes. You will also discover the skills to work
effectively in the kitchen and maintain the quality and safety of the workplace, as well all
the underpinning knowledge to successfully begin work after one year of study. Our
highly qualified Australian teachers have experience in some of the most well known
kitchens and hotels.
Upon successful completion of this course, individuals can continue their studies right up
to Bachelor’s Degree level in the field of Hospitality, or begin their career in the
workforce as a qualified chef.
Upon completing the program, you will earn a Certificate III in Commercial Cookery,
a globally recognized qualification. This certification confirms your skills in food safety, kitchen operations, and diverse cooking techniques, preparing you for roles in various hospitality settings. It provides a strong foundation for career advancement and global job opportunities.

discretion and judgment, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities. Completion of this
qualification contributes to recognition as a trade cook. This qualification provides a pathway to work as a cook in organizations such as restaurants, hotels, clubs, pubs, cafes and
coffee shops. The skills in this qualification must be applied in accordance with Commonwealth and State and Territory legislation, Australian standards and industry codes of
practice. No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

test kitchen rentals, and on-site spaces for group training and team-building activities. With opportunities for hands-on experience and hotel
internships, these facilities ensure students gain practical skills and real-world industry exposure for a successful culinary career.
All training at Australian Vocational Thailand is conducted in professional standard fully equipped commercial kitchens and in simulated and real work
environments. Students will have access to their own station and prepare all the food by themselves.
The curriculum features practical assessments where students will be tasked with watching demonstrations and then preparing and serving the food for
assessment by themselves. We do not practice with shared stations or shared ingredients, we teach in a high quality environment with industry standard
equipment and ingredients.

Australian Vocational Thailand’s chef trainers must hold 2 qualifications to comply with the accredited standards they will teach to you: The Training & Assessment Certificate IV
from Australia, which ensures the teachers have been trained for 12 months to ensure the delivery and assessment of the course is done to the highest level. The trainers must also hold
the qualification (or higher) that they teach, in this case being the Certificate III in Commercial Cookery.
By legally requiring these 2 qualifications for our trainers, we can guarantee you that you are being taught by highly trained industry professionals who are experienced in both
professional level training and the actual skill set they are teaching to the students. This is the true level of vocational education and trade skills, learning from trade professionals with
real accredited qualifications.
